To train you only on boxed beef would prepare you in skills used solely in processing counter ready meats. By using railed beef, you learn the primal cuts (where boxed beef originates) which sharpens your cutting skills in deboning carcasses at an increasing rate of productivity without injury. This generic approach has proven most successful and this gives you the confidence and hope of reaching your personal goal.

All theory work is done at home allowing more time for hands-on practice.

Weekly tests are re-written as often as the trainee would like in order to upgrade his knowledge and marks. This is well appreciated by students who have low memorization skills.

Some trainees could be called to acquire practical skills for a few days at local stores.

Most of your time is spent in cutting; beef, pork, poultry, lamb and preparing meat for retail. However, a very experienced and knowledgeable teacher will make you understand profit and loss, waste management, tax, merchandising, practical business applications, costing, pricing, inventory control, sanitation and preparing meats for curing or smoking.

The course runs 40hrs per week in shop.

The province will credit you with 620 hrs on a 4000 hour program.
 

You should be in good physical condition since considerable lifting is required and work evolves in a cool to cold environment. Motor skills are necessary to assure basic skills in variety of hand and power tools.

This trade requires cleanliness and a dress code of white shirt and tie and appropriate safety footwear.

Will work standing up all day.

Slow starters who are not interested in working hard need not apply in this demanding trade.

Would be paid by Ontario Skills.

Books, tools and accessories approximately $500.00.

Lodging cost $100.00 per month for single or double occupancy.

Would receive employment insurance if eligible.

Could obtain financial assistance from OSAP

Could receive travel allowance or room and board.

Continuous intake from last week of August to January.

Will find work in food chains, independent stores, inspection plants and processing.

Most of all store management will recognize that you have previous meat cutting experience.

Your certificate will state that the apprentice’s skills and knowledge meet the standard set by the industry for skilled workers in that trade.

Graduates will have excellent practical training and knowledge in latest cuts to enter industry that is always interested in seeking aggressive trainees who display interest in supervisory or management positions.
